Apple Apricot Stuffed Pork Chops

6 Loin Pork Chops, 1 Inch Thick
½ Cup Chopped Onion
½ Cup Chopped Celery
1 Tbsp. Butter
½ Cup Soft Breadcrumbs
½ Cup Chopped Apple
1/3 Cup Golden or Dark Raisins
1 Tbsp. Brown Sugar
½ Tsp. Ginger
¼ Cup Apricot Preserves

Cut deep pockets in each pork chop.  In a skillet, cook onion and celery in butter until crisp-tender.  Add breadcrumbs, apple, raisins, brown sugar, ginger and 2 Tbsp. preserves and mix well.  Stuff each chop with about ¼ cup stuffing mixture.  Place in a un-greased 9x13 pan and cover.  Bake for 45 minutes at 325 degrees.  Uncover and spread top of chops with remaining 2 Tbsp. preserves.  Bake uncovered an additional 15-20 minutes or until pork chops are tender. Serve with smashed potatoes and green beans.
